Mark's Elvis Sandwhich

So, you may know that I have a small cafe style restaurant that sells sandwiches and Sodas. I was thinking of adding the Elvis sandwich, that me and my dad (Mark Dupree) used to eat, to the menu. During my "research" I was shocked to learn that ours is NOT the true version of the Elvis. The Elvis sandwich uses peanut butter and bananas, yes, but no marshmallow spread! NO MARSHMALLOWS! Plus he fried it, (which i actually knew, but didn't know it was in a half stick of butter)! AND....bacon. There was mention of bacon in the sandwich. I think I'll stick to our version. (P.S. this is a surprising recipe to be coming from my dad, the one who was always trying to force yucky healthy foods upon me, like cream of wheat! Haha. For my own good.)

  • 2 slices bread
  • creamy peanut butter
  • small banana, sliced in medalians
  • Marshmellow spread (the kind you put on ice cream)
Spread the PB on one slice, the marshmellow on the other (a little bit), and lay the coin shaped banana slices in between. (For The Muse Cafe we'll grill it on the panini press for a melty gooey texture.)

Portobello Pork Chops

"I got this recipe from a demo "the pork lady" did for a middle school class I was student teaching. It was the grand prize winner for "No Recipe" recipe contest for "The Other White Meat" by Michael Holowis. It's one of my top favorite meals, I cook it all the time, and it is so easy, and reletively healthy (although I always put in way more syrup)" -Melissa Haws

Ingredients

  • 4 bone-in pork rib or loin chops, 3/4-inch thick
  • 1 1/2 cups mild chunky salsa
  • 1 cup chopped Portobello mushrooms
  • 1 cup shredded cheddar cheese
  • 2 tablespoons maple syrup
  • 1/4 cup snipped fresh parsley

Cooking Directions:
Heat oven to 375°F. Trim fat from chops. Spoon salsa into a 3-quart rectangular baking dish. Arrange chops on top of salsa. Combine Portobello mushrooms, cheddar cheese and maple syrup in a medium bowl. Spoon over chops. Bake, uncovered, for 25 to 30 minutes. Sprinkle with parsley. Serve chops with salsa mixture. Makes 4 servings.

German Pancakes (Dupree style)

Ingredients
  • 1 C flour
  • 1 T sugar
  • Dash salt
  • 1.25 C milk
  • 1 egg
  • 1 T oil

Preheat a non-stick griddle (400 degrees). In a bowl, stir dry ingredients. Add wet ingredients to dry and stir with a whisk (small lumps are OK, they make pancakes lighter). Cook on a hot griddle (400 degrees). Dab on 3 tablespoons of batter, spread until center is paper thin, patching holes, as needed (thick sides help when turning). Flip as soon as batter is dry enough to. Cook both sides until golden. If they are crusty, they are overcooked. Top with your favorite toppings. (My family likes butter w/ a dusting of powdered sugar, or cinnamon sugar. Fruit and whipped cream, sour cream or cream cheese is also good.) Roll up tight & cut a thin bite. Serves 2-3.
